We had the honor of serving all the amazing people at The Everglades Roots Festival over the weekend. Over 800 miles round trip. 3 flat tires ( Two trailer tires blew just after 4 am 45 minutes from home). A dead battery. 20 hour work days. Got stuck in the mud. Ran out of gas. However, none of that could take anything away from the absolutely amazing experience we had. The music was fantastic. The venue is beautiful. Every single person involved in making this happen was absolutely incredible. I can not thank you all enough for allowing us to be there. Too many people to name but I do want to brag that Wayne Rouse, my right hand man, is just simply a bad ass! I could have never come close to pulling it off this weekend without him and wouldn't want to try with anyone else.
Thank you to everyone that came by and shared their time in the Everglades with us. It was a special group of "family" that we shared our weekend with. I know I will never forget this weekend and already have 2021 Roots Fest on my calendar!!!!

How did we come up with this to honor our newest Jaguar and why in the world do we spell it that way?! I, owner of Taylor Tacos- Ben Taylor, was at @hemmingpark, as we are every Tuesday, and one of our local news stations was doing a special on @nickfoles coming to town. They interviewed my staff and made a comment that they were surprised I didn't already have a Nick Foles taco. I immediately responded that he should come back next week and I would have one! (Side note - HE NEVER CAME BACK!!) Then the dilemma.....what do I do...a philly cheese steak is too cliche. So I googled "what does Nick Foles like to eat". To my delight, Mr. Foles had just done an interview with Esquire magazine about leaving Philly and coming to Jax. It did not list his preferred menu to my surprise, lol, but it did mention two things. 1. He had not had a philly cheese steak in 5 years (whew) and 2. His favorite restaurant in Philly was a place called Friday Saturday Sunday in Philadelphia. Soooo, I decided to call them, not sure exactly how crazy they would think I am. I explained that I have a food truck in Jacksonville Florida and needed help. They were AMAZING!!!! We spent 20 minutes on the phone discussing Mr. and Mrs. Foles favorite meals. And Voilá, you have the Nick FoleSS Taylor Taco style. This is legitimately his favorite meal from his favorite restaurant in taco form. Perhaps now you have also figured out the spelling. I wanted to pay hommage to the amazing people at Friday Saturday Sunday in Philadelphia. @friday.saturday.sunday 🌮
